The others include way too much other unnecessary ingredients. I substitute almond butter to prevent possible allergy problems. I make my own nut butter using peanuts and fancy mixed nuts I have been baking these cookies for several years In the future I will try adding a bit of quick oats and/or choc chips, or sub almond butter for peanut butter to switch it up a bit, but the three ingredient recipe is perfection! They are so easy to make that I bought a few jars of peanut butter to keep on hand so I can make them on a regular basis. I sprinkled flaked salt on some, which I personally preferred. The cookies are soft and chewy and deliciously peanut buttery. I cut the sugar to 3/4 cup and creamed it with the egg before adding the nut butter. I used Whole Foods organic no salt creamy peanut butter, organic fine grain sugar, an organic egg, and 1 tsp. These are amazing!! I could not believe how a recipe so simple could be SO good. They were so bad even the squirrels didn't want them. These are quite possibly the worst cookies I have ever made. I put half what the recipe called for in (standard practice for any American recipe) and it's still too sweet. I agree the flaky salt on top is crucial! Added chocolate chips the last time which were good, but don't put in too many so as not to lose the peanutty flavor. Like others, after the first batch I cut the sugar in half and added a half teaspoon of vanilla.I've used TJ's smooth, chunky, and a mixture of those with good results. Love these cookies! So easy to make, the basic recipe is fine and they can also be easily tweaked for a little variety. However, they ARE very, very sweet, even if you sprinkle sea salt on top to offset the sweetness. No matter … the cookies are easy to make, and easy to give as a gift. This actually is a very old recipe … published decades ago. They do taste best when the bottom and edges are just slightly browned and crisp.
